Soup is the ultimate cozy food, for short winter days by the fire, and long summer days in the sun. This recipe is designed to be a delicious, gut-nourishing, ancestral meal for the whole family

Ingredients

  • 1 kg Mushrooms
  • ½ Red or White Onion
  • 1 and ½ tsp. Minced Garlic
  • 750 ml Chicken Stock/Broth
  • 90 ml Single Cream
  • 1 and ½ tsp. Sea Salt
  • 2 sprigs Rosemary Optional
  • 2 tbsp. Butter

Instructions

  • Melt a knob of butter in a saucepan over medium-high heat, eventually adding chopped onion and garlic and sauté until golden brown.
  • When the onions and garlic begin to turn a golden brown, add about 65% of your mushrooms. Bigger pieces can be picked apart using your hands, whereas smaller mushrooms as they are. The heat will draw moisture from the onions causing them to shrivel. Stir frequently for ten minutes.
  • If you need to add more butter, you can, but the mushrooms should provide enough water to stop anything from burning at the bottom of the pan. Adding more butter will add to the creaminess (which I highly recommend). At this point, I add 100ml of water as a precursor to the stock to soften the mushrooms more quickly. Stir for another 15 minutes, squeezing the mushrooms against the side of the pan.
  • Measure out your Chicken stock and add it to the pan and stir well for another five minutes, before adding your Single cream. Continue stirring to incorporate, before adding your Sea salt and Rosemary.
  • Reduce heat and place a lid on the soup, stirring occasionally for twenty minutes. After the twenty minutes are up, remove the rosemary sprigs.
  • You can choose to blend your delicious meal with a soup blender or leave it perfectly chunky.
  • Serve with a slice of toasted sourdough bread and you are all done!

Notes

This recipe contains chicken stock, and although not quite bone broth which is very helpful for replenishing healthy gut bacteria, chicken stock still has many of its own nutritional benefits.

Prebiotics and Probiotics are a large part of this recipe, and if you do not have any pre-existing conditions which make these two things difficult for your gut to handle, this recipe can be extremely beneficial for gut healing.
Remember: The Gut is our second brain, and how we look after it affects us as much mentally as it does physically.
 
Chicken stock:
Although not strictly bone broth, this chicken stock is made from boiling the carcass of a whole chicken for more than six hours, which I find to give a less bitter taste than bone broth, for the purposes of this recipe. Of course, bone broth is also a great superfood to include in its stead. Both can work as bases for any soup or stews and are brilliant ways to incorporate nose-to-tail eating into your day-to-day.
